No You Hang Up is a little bit bigger than the normal Weiss beer, made to mimic wine. Not too much acidity, but enough to make its presence felt. This original tart-ish creation, finishes nice and clean. The tart cherry does what we had hoped it would. We’re finding this one pairs nicely either pre or post dinner. Either with a pre dinner charcuterie board or a post meal wind down beverage, this slots itself into our lineup beautiful. Give it a try and tell us what you think.

This trip starts as many do on a sunny Sunday afternoon at the tippy, discussing grill cleaning, spring, cherry blossoms and the flavors that coincide with the transition from spring rain to summer sun. Talk makes its way around the circle to Jeremy who offers, “Cherry and lime kind of kick ass together.” The evolution from that declaration to Rickey was a short one. Sourness from wild fermentation pulls taught against the heady juiciness of the fruit, with a light finishing touch of juniper berries stitching it together. Drink Rickey because blossoms turn to fruit.

With Sakura we drag the joy of Spring’s regeneration into the languid summer doldrums. The evocation of that ethereal moment when winter is gone and the warm weather is drifting in; rebirth through age captured in the delicate aromatic waft of the cherry’s blossom. A simple salted sour lightened and dried with sushi rice in the mash; the promise of warmth ending dormant chill, brought forward to accentuate balmy summer evenings. The first days of Carton Brewing were spent tracking a bright purple path through our new building from our backyard mulberry tree. We decided that if mulberry juice was going to get that deep into the brewery, it probably should get into a beer as well. Stealing a process from Berliners, we let the lactics in a wheated mash sour up, accentuating the bright side of the mulberry’s profile. Meant for quaffing on balmy summer days when there is no reason to avoid direct sunlight, drink Monkey Chased The Weasel because there is more than a moon at the top of the summer.

For Fifty Years Later, our game was designed around translating some of the flavors that delight and inspire our co-founder, Augie Carton, into a celebratory 50th birthday beer.The classic key lime tart pastry from The Flake Tart provides the starting point, where snappy citrus notes from key lime juice and Motueka hops poke through hints of vanilla, and then are evened out by subtle, biscuit-y, graham cracker crumb crust finish.
