Wedge Issue: Chinook | Simcoe

It’s usually better to unify than divide. Wedge Issue™ is a series of double IPA’s where we take two hops that divide opinion around the brewery and put them together in equal amounts to make the whole greater than the sum of the parts. For Wedge Issue: Chinook | Simcoe, we added significant amounts of Chinook and Simcoe hops as pellets, and a custom distillate to a grain bill consisting of Pearl malt, wheat, and oats fermented with New England yeast. Look for the meeting of Chinook’s distant spicy pine stickiness to be defined by Simcoe’s fruits on earth profile in a potently dank combo.
