An Imperial Stout Aged for 3 years in 4 Roses Bourbon Barrels, then blended with Vermont Maple Syrup. This project was a nod to Sean Lawson, our friend who started Lawson’s Finest Liquids.
We crafted this beer to bring to the Lawsons Maple Chili Fest in March 2025
Smoke malt is one of the more dubious tools in a brewer’s bag because thresholds are vastly different. What to one palate is a hint of bacon, or whiff of BBQ, to another is ashtray or Band-Aids. How can Carton ignore playing this game? Where can smoldering aromatics go off the beaten craft? In To Be Blunt we have reassembled the deconstructed aspects of blunt wrap. Rich, dark malts brought smoke by the addition of oak smoked pale wheat, touched with a petting zoo of animal shaped marshmallows and a heavy plug of Simcoe, Columbus, and Amarillo hops. Drink To Be Blunt and hand me down a 50- pack
Meet Something Loud—our latest hazy double IPA that brings the noise without losing the nuance. Clocking in at 8%, this beauty dials into the dank, citrusy sweet spot where hops and hazy dreams collide.
We started with Citra hop oil for an amplified burst of bright citrus—think orange peel and tropical fruit dialed up to 11. Then layered in Amarillo to add a soft floral sweetness and juicy orange notes, and finished with Simcoe for that perfect punch of pine, earthy resin, and a touch of passionfruit. It’s sticky, it’s loud, and it’s beautifully balanced.
The result? A lush, heady ride of aroma and flavor that’s unmistakably Carton. It’s hazy, it’s terpene-forward, and it’s built to turn heads.
Catch it while it’s fresh. Only at the taproom for now.

Introducing Second Chakra, Carton Brewing’s latest take on the classic Golden Ale. 🍻 With a 5% ABV, this is the perfect beer for those who crave complexity without the weight. Light and refreshing, Second Chakra opens with subtle malt sweetness from Vienna malt, balanced by a smooth, creamy body from Carapils. It’s all about finding that sweet spot between easy drinking and full flavor.
But what sets Second Chakra apart is the hop blend. We’ve paired the bright citrus and piney notes of Centennial hops with the tropical burst of Nelson Sauvin, and topped it off with the herbal, earthy character of Turkey’s Pick hops. All of this is fermented with Kölsch yeast, giving it a crisp, clean finish with just a hint of fruitiness that rounds out the entire experience.
Whether you’re a fan of hop-forward beers or malt lovers looking for something refreshing, Second Chakra is your new go-to pour. 🍺
Introducing Will It Melba?, our latest foray into the world of pastry cream ales—a tribute to the flavors of the classic Peach Melba dessert, with a twist. At 10% ABV, this indulgent cream ale marries the essence of ripe peaches, vibrant raspberries, and rich vanilla, inviting both food lovers and craft beer enthusiasts to explore the interplay of dessert and drink in one glass.
Just as Escoffier perfected the harmony between poached peaches and tangy raspberry purée in his celebrated dessert, Will It Melba? captures that delicate balance in beer form. Each sip begins with the sun-soaked sweetness of ripe peach, softly rounded by the creamy body of the ale. The mid-palate brightens with a punch of raspberry’s tartness, cutting through the sweetness with a lively, mouth-puckering edge. Finally, the smooth, comforting richness of vanilla, gives it that unmistakable pastry finish—a nod to the vanilla ice cream traditionally served in the original dessert.
