Meet Something Loud—our latest hazy double IPA that brings the noise without losing the nuance. Clocking in at 8%, this beauty dials into the dank, citrusy sweet spot where hops and hazy dreams collide.
We started with Citra hop oil for an amplified burst of bright citrus—think orange peel and tropical fruit dialed up to 11. Then layered in Amarillo to add a soft floral sweetness and juicy orange notes, and finished with Simcoe for that perfect punch of pine, earthy resin, and a touch of passionfruit. It’s sticky, it’s loud, and it’s beautifully balanced.
The result? A lush, heady ride of aroma and flavor that’s unmistakably Carton. It’s hazy, it’s terpene-forward, and it’s built to turn heads.
Catch it while it’s fresh. Only at the taproom for now.
Introducing an exciting new addition to our Irregular Coffee lineup: Café Recipe Contest, a playful nod to the 1920s and the advent of the pineapple upside-down cake. This Imperial Coffee Cream Ale starts with our golden cream ale base, then takes a nostalgic dive into dessert history. Finished with pineapple, maraschino cherry, vanilla, and brown sugar, it recreates the flavors of this beloved dessert while maintaining a tropical coffee twist.
Inspired by the past, but brewed with today’s beer lover in mind, Café Recipe Contest blends sweetness with rich, roasted coffee notes for a vibrant yet comforting experience.
The realm of the pastry chef essentially breaks down into two distinct arenas; decadent “rock your world” chocolate confections and, the necessarily more creative, “shake your beliefs” non-chocolate creations. Pastry Cream ales are our foray into the sweeter side of inspiration from the other side of the dessert menu. Will It Waffle? is an imperial cream ale brewed with almond flour, maple syrup, Belgian waffles, bananas and vanilla. Drink Will It Waffle? because if you are gonna face the pastry plate, stack it high.
It’s usually better to unify rather than divide. Wedge Issue is a series of double IPA’s where we take two hops that divide opinion around the brewery and put them together in equal amounts to make the whole greater than the sum of the parts. For Wedge Issue: Motueka l Waimea, we added significant amounts of Motueka and Waimea hops as both pellets and a custom distillate to a grain bill consisting of pilsner, wheat, and oats fermented with New England yeast. Look for the meeting of Motueka’s papaya and lime profile to be defined by Waimea’s pulpy orange and cedar notes in a plush pale. Drink Wedge Issue and believe in a day when arguments end in delight.

Winking Through a Scope is a moment of clarity in a sea of haze. A transparent-gold base of wheated, oated pilsner malt, allows for openly expressive hoppiness. Citra and Galaxy at whirlpool, and again in the dry hop, follow late-boil Simcoe, beaming grapefruity-ness and tropical aroma. A break of clear sky, with more cloudiness on the horizon.
