Disaster is part of the Sandy Project. It all started when we experimented with a souring lactic rest of 24 hours on our session stout -to see what would happen- only to have Hurricane Sandy extend souring 8 more days. The next step involved jiggering the brewing process to recreate those conditions for the charity project, Something Like Sandy. Disaster is some of that liquid put in a barrel in the funkiest part of our cellar and left alone except for the periodic topping up when we brew our Carton of Milk.
