The hardest thing to explain on the side of a can is when we alter the traditional process looking to augment rather than supplement. Floresinator exists because Fair Mountain Coffee Roasters brought in Flores Bajawa Ngura beans that offer notes of baker’s chocolate, and hints of licorice that we love in a well-constructed doppelbock. To further this notion, we brewed a proper doppel, subbing out hops with Flores beans. At the beginning of the boil, where hops would temper the malt’s sweetness with a bitter touch, we used raw green beans. At whirlpool, where hops would pull in savory direction, we used ground, dark roast. Finally, for dry additions, where hops would layer fruit, we used medium roasted whole beans.
