Spend enough time in the company of creative brewers and inspiration will strike. Often late at night, deep in the cups, drinking someone else’s experiment. Realization of potential is much easier if you are in the company of the inspiring brewers allowing discussion of a notion in concert. Sitting at Burial while drinking “Izakaya Afternoon,” conversation turned to the partnership of vanillin tones and umami of a miso addition acting as a cuisine cheat for barrel time. A couple of draughts later Shinshu was born. Burial came up and together we birthed a cream ale having a serious miso addition that moves it into the vanilla cake batter world of aromas without getting too sweet.
